Hell’s Backbone is a fine dining restaurant location in Boulder, Utah. Opened and ran by Jen Castle and Blake Spalding the restaurant has won numerous awards for their mindful approach. The restaurant has been nominated multiple times by the prestigious James Beard Foundation.
Of note, the restaurant is known for its approach to sustainable practices. The restaurant serves organic, locally produced, regionally and seasonally appropriate cuisine; much is grown on site in the restaurant’s two gardens and six-acre farm. The menu routinely features dishes made with fruit from Boulder’s heirloom orchards and relies largely on local ranchers for the grass-fed meat served.
