Around these parts, we hold ‘the classics’ in very high regard. From the absolute building blocks, tried and true timeless techniques and recipes to the age-old world-renowned appellations and wine styles.
However, I think I can speak for many of us at the restaurant by saying that we have a very special place in our hearts for the “new,” the “avant-garde,” the “pioneer.” It is what excites us, what keeps us striving, learning, cooking. It is success, and it is also “back to the drawing board.” Revelations, and failures. It is the intersection where challenge, luck, pressure and old fashioned hard work meet, our eyes light up and our hearts are full. People tell us it’ll never work and we press on towards the goal we hold in our mind’s eye. I have a sneaking suspicion many of you feel the exact same way. After all, this is Utah…pioneering is what do, what we’ve done from the beginning. It is for this reason that we are so enthused to extend the invitation to experience an evening with two of Chile’s most dynamic new wine pioneers: René Merino and Matias Garcés Silva.
The term “New California” is all the buzz right now, but there is a stirring in the Southern Hemisphere as well. Young, talented people, passionate for something other than the status quo are also digging in the dirt down there. These two gentlemen are leading the charge, each in their own lesser-known appellations. In fact, these seaside appellations wouldn’t even exist if they hadn’t willed them to exist and then paved the road (quite literally). Chile has long been known for churning out oceans of decently drinkable wines for cheap cheap prices. The pendulum is at long last swinging our way and we’re beginning to see the small batch, family-owned, responsibly crafted bottlings hit our shores. Sure, they’re more precious..but they’re infinitely more interesting. Interesting, as in they actually show a tremendous sense of character and an exciting sense of place. The young, mineral-driven soils and proximity to the South Pacific shine through brilliantly. That, dear friends is what its all about, wine that smells and tastes and feels altogether unique, just like the landscape of which it was a part and just like the pioneers that grew it.
Join us, Saturday December 10th at the fresh-faced (and very sexy) new Finca for an inspiring evening of altogether unique cuisine and wine. Meet these two humble pioneers and catch their passion for new frontiers in winegrowing. And don’t you worry, Phelix may well have outdone himself on this particular menu.
