The restaurant draws inspiration from Whiskers the Blind Rabbit, a fictional character named by Jesus’ daughter, Yezia, who navigates a whimsical world with charm and curiosity. “It all started with the logo; I fell in love with it, and the character Whiskers, as my daughter calls him,” Jesus said. “Our goal is for you to experience enjoying dinner or lunch in the rabbit’s habitat.”

As the founder of Sol Agave, Jesus has consistently demonstrated a passion for hospitality and culinary excellence. With Blind Rabbit Kitchen, he aims to revolutionize the dining experience by merging his expertise in design and food culture with a casual yet sophisticated steakhouse ambiance.

Blind Rabbit’s Kitchen’s culinary team is run by Oscar Perez, an accomplished executive chef whose culinary journey has been marked by innovation and creativity. Having honed his skills at establishments such as Elephant Bar, the Cheesecake Factory, and Nick’s Hospitality, chef Perez brings a wealth of experience to Blind Rabbit Kitchen. His previous ventures, including Maiz Cocina & Sol Agave showcased his ability to infuse modern techniques into traditional flavors, a philosophy he continues to champion at Blind Rabbit Kitchen.
